Well I did make this last night for Dinner, and it was really really nice. I had this dish once on holiday in USA in a restaurant called Brandley's in North Conway, and have often wanted to re-create it. I have to say that this was much nicer. Good texture, and flavour and looked lovely in the dish too. In the absense of a reply to the query to whether the aubergine is fried or not I did fry it and this I think gave it a good texture. You are right too the peeling does help. The one I had in the US was much squashier and nowhere near as tasty.
