These are like crab cakes, but with zucchini instead.
2 cups grated zucchini
2 eggs, beaten
1 cup seasoned bread crumbs
1 Tbsp mayonnaise
1 Tbsp OLD BAY seasoning
2 Tbsp grated onion
Flour for coating
oil for frying
Drain grated zucchoni in colander for 2 hours
In a large bowl, mix all ingredients together except flour and oil. Form into cakes. Coat with flour. Fry in oil (abour 1/4-1/2 inches deep in pan) until brown on both sides
Yield 2-3 servings (Large cakes) Can be made smaller if that's your preference
