Default What to Do With Summer Squash

When summer rolls around, we always have an abundance of the classic yellow summer squash. We get tired of just sauteeing it all the time. Could someone please share a recipe or two that could use this type of squash?

Spinach Stuffed Squash (serves 8-10) DOn't let the long list of ingredients for this recipe deter you from trying it - This is EASY to make & very delicious!!

This makes quite a bit - if you'd like to make a smaller amount - just use fewer squash The leftover stuffing freezes well & can be used later for stuffed mushrooms!!

3 boxes frozen chopped spinach thawed with liquid squeezed out
1 stick butter
1 regular onion, chopped
1 small bunch (3-4) green onions, chopped
1 ;arge celery stalk, chopped
1/3 cup chopped parsley
2 cloves garlic, minced
1 cup Italian bread crimbs
1/3 cup grated Parmesan
1/2 tsp thyme
1 tsp black pepper
1 tsp onion salr
1/2 tsp garlic salt
8 large/10 small yellow squash
salt to taste
1/2 cup bread crumbs
1/2 stick butter

Cut squash in half lengthwise and steam them until just half cooked with about 1 1/2 inches water in a large pot. Remove from pot and set aside to cool

Malt the butter in a saucepan and saute the celery, onion, green onions and parslay until wilted. Stir in the next 9 ingredients, then the spinach

Scoop out the seeds from the squash and discard. Stuff the squash halves with the spinach mixture; sprinkle each one with extra bread crumbs and dot each with butter

Bake at 350 degrees for about 20-25 minutes

FourBear, hope this recipe is one way you can use up all of those yellow squash!!

Italian Squash

1 cup canned Italian tomatoes (with liquid); drain, seed and chop tomatoes, reserving liquid
2 tsp minced fresh parsley
2 garlic clives, minced
1/2 tsp oregano leaves
1/4 tsp salt
2 medium yellow squash, cut into 1/4 inch slices

In microwavable casserole dish, combine tomatoes with liquid, parsley, garlic, oregano, and salt. Add squash and stir to combine. Cover with vented plastic wrap and microwave on High (100%) for 5 minutes, stirring halfway through cooking. Let stand covered for 1 minute before serving

Makes 2 large or 4 small servings

I have the same problem. I run out ideas fo how to fix it. The Italian squash sounds really good. I like any Italian recipes. I will have to try this one I am sure my family will love it. And be happy that I found a new way to fix it.

I love squash but I always seem to cook it the same way in the oven with butter and brown sugar. I would love to try it some different ways also. I will have to try these they sound yummy. Thanks.

Wow, thanks for those great recipes! I think I'll try the spinach-stuffed squash first, since I'm a huge fan of spinach (believe it or not). I'm looking forward to the time I'm overwhelmed with squash again!
