Default buttermilk substitute

If you don't have the buttermilk on hand, put about 1 teaspoon of vinegar into 1/2 milk and let it sit for 20-30 minutes.

I buy powdered buttermilk in 5 pounds bags and store it in the freezer. Four tablespoons of buttermilk powder to one cup of water = 1 cup buttermilk.

I have never seen powdered buttermilk although I must admit that I have never really looked for it. I live in Australia and we don't always get the full range of products that you do in the States.

I love just drinking buttermilk so I might just try your tip hardcase and see how it goes. Probably would be okay for cooking but not that great for drinking but I am willing to give it a go.

never tried it for drinking, let me know how it turns out, but works great for cooking

I have used the vinegar in milk when I had not buttermilk powdered milk on hand. One of the local markets carries one brand of powdered buttermilk and I try to keep some around. Personally, I don't find either one suitable for drinking, but they work great in recipes.

Is that 1/2 cup ? Or 1/2 liter ? And does this work with all types of milk ?

Combine one cup of milk (or soymilk) plus one tablespoon of lemon juice or vinegar, and allow to stand for ten minutes OR Combine one cup of milk plus two teaspoons cream of tartar, and allow to stand for ten minutes OR Combine two parts plain yogurt plus one part milk OR plain, low-fat yogurt OR sour cream OR molasses (in batters that also call for baking soda) Cooking hints: Churn buttermilk may require longer baking times than ordinary commercial buttermilk.
