Well you learn something everyday.... I never knew that the best way to store eggs is with the pointed end face down. As the yolk rises the air space in the rounded end protects the yolk from touching the end.

It is even better if you leave them in thier original carton instead of putting them in the fridge compartment.

An easy way to determine if an egg is fresh is to place the egg in a deep bowl or pan of cool water . If the egg sinks to the bottom, it is fresh. If the egg rises to the surface and floats , throw it away.

A friend of mine swears to me that you don't really need to refrigerate eggs - just keep them in a cool place. Is that true, or has she been eating floaty eggs all this time?

I've noticed that open kitchen restaurants don't refrigerate their eggs, although they definitely use them more quickly than we do at home.

I never really thought about not refrigerating them before, but someone pointed out that they cook better that way.

I find that if you are in any doubt then it's safer to chuck the egg but if you are determined to use it then a quick check of the colour and smell of the cracked egg should be a giveaway as to it's condition.
