Black Bean Turtle Soup

This recipe is quick and easy!! (and delicious!) I got this recipe from my sister - have no idea how the "turtle" part fits in. Her husband is a University of Maryland alumnus - so maybe they meant "Terps" soup???? Who knows?

Anyway, give this a try - I think you'll like it


Ingredients
1 tablespoon canola oil
1 ½ cups chopped onion
4 cloves garlic
1 ½ teaspoons cumin
1 tablespoon chili powder
½ teaspoon dried oregano leaves
1/8 teaspoon cayenne pepper
½ teaspoon salt
1 cup diced red bell pepper
½ cup diced yellow pepper
4½ cups black beans, low-sodium canned, drained
1 ½ cups water

Preparation
In a large pot over medium heat, cook onion in oil until tender, about 3-4 minutes. Stir in garlic, cumin, chili powder, oregano, cayenne, pepper, salt and diced peppers. In a blender, puree 1 ½ cups of beans with half (3/4 cup) the water on high setting, about 30 seconds. Add bean mixture to pot. Add the rest of the water (3/4 cup) and remaining whole beans, unblended, to the pot and stir together. Reduce heat and simmer for 15 minutes, stirring often. Makes about five 1-cup servings
