Default Mashed Cauliflower?

Sometimes when I'm roasting a chicken or piece of beef, I'll have mashed cauliflower instead of potatoes.

I cut the head of cauliflower up and steam it for about 45 - 60 minutes. Then I put it in a large pot and mash it, stirring in some light cream cheese and sometimes chicken or beef stock powder. I let it stay warm on a low heat for a while uncovered so excess moisture can evaporate.

We find this to be a satisfying potato substitute.

I need to try using your recipe. I had one that called for using vegetable stock and I did not like the consistency of the finished product, although it tasted great.

I think what determines the consistency of my attempts is how much light cream cheese I add, and also how long I let it sit on a low heat, uncovered as moisture evaporates.

I've noticed that warmed up leftovers are more firm, but still taste good.

I'm not a huge cauliflower fan myself, but I have to say, this sounds kind of delicious for one reason or another! I'm going to test it out and let you know how it goes!

This sounds very good! I've made mashed cauliflower in the past and we liked it, but it didn't have something yummy like cream cheese in it. Is there a reason why steaming the cauliflower already cut up wouldn't work? It would take a much shorter time... or even cooking it in chicken broth? Thank you for this. I *do* get tired of the same side dishes!

Hrm, I've never like mashed cauliflower myself - maybe I'm just too attached to potatoes! But I'd never heard of adding in other ingredients to the cauliflower - I might give it another try and see if you can change my mind.

That sounds delicious! I would love to try it, since potatoes really aren't that great for you.

You could also add other veggies to your mash, like rutabagas or carrots.

Hey katharina, I actually do cut the cauliflower before steaming, then put it in a pot over low heat to mash it. Maybe I misunderstood?

I have added butter in the past too, but that's getting away from trying to make a healthier dish, I guess.

I tested this Mashed Cauliflower out last night and it was wonderful. I just used a little bit of warm milk and seasoned to taste with salt and pepper. Incredibly easy to make and healthy... I'm not even a huge Cauliflower fan but I loved this.

This seems like a nice recipe to make some personal flavoring adaptations to as well. I would definitely suggest trying this!

I saw this on Rachael Ray a couple weeks ago... it looks good! Do expect a different flavor though - don't expect it to taste like potatoes!
