Default Birthday Dinner for Diabetic Friend

My best friend has a birthday coming up next month. He is a diabetic and controls his condition mainly through diet. I want to prepare a special birthday dinner for him, and could really use some ideas for an entree and side dishes.

My friend is not a fan of chicken, so that is out. He does love any type of fresh water fish, however.

Fortunately, he loves quite a few green vegetables, with asparagus being one of his favorites. He also enjoys cauliflower and carrots.

Dessert is also an issue. Any ideas on that front would be welcome as well.

I don't know too much about recipes for Diabetics but I went on a little search for you and found recipes for the following at American Diabetes Services:

Black Eyed Peas
Braised Veal Shanks
Grandmom's Chop Suey
Spicy Meatball Sandwiches

I also found a couple desert recipes you might like here:

Carrot Cake
Lime Cheesecake
Fudge

thats surely going to help me . my dad is a diabetic and there were not many options for me as to what all to make for the party. but this should helo me out.

Thank you. The black eyed peas made me think; he enjoys pork chops and also various types of greens, so I think I am going to try something along these lines:

Grilled pork chops
Black eyed peas
Collards, sauteed with olive oil and seasoned with a bit of Mrs. Dash
Creamed cauliflower (subbing for the mashed potatoes)

I will probably make a small quantity of corn bread muffins. My friend tries to watch the breads, but if I put only one or two muffins on the table, he won't ask for more.

Of course, there will have to be plenty of freshly brewed tea.

For dessert, I just found a sorbet that I can make with fresh frozen berries (maybe blueberries and strawberries mixed) and a splash of orange juice

The menu you listed in a later post sounded great. How did your dinner
party (or special dinner) for your friend go?

Well, everything went off without a hitch. I had the black eyed peas cooking in the crock pot, the collards on low on the stove, and for the creamed cauliflower, I cut the amount of vegetable boullion in half (last time I made them, I didn't like the consistency). The grilled pork chops turned out just right. I ended up with six of us here to have the birthday dinner, which turned out to be a perfect amount of folks. Today, I have about enough collards left to enjoy a small bowl for lunch and that is that. No leftovers. So I think I can call the meal a success.

Yep, that sounds like a very successful dinner party to me! And nothing that
your friend wasn't able to eat, the way it sounds. Did you have a diabetic-
friendly dessert, or just skip dessert?

Dessert was pretty simple. I had thought about sugar free angel food cake, but of course he also has to watch carbs. So we went for one less full of carbs, which was fresh blueberries and strawberries with a splash of unsweetened juice and some ice made into smoothies in my Magic Bullet.
