Default Lowfat Indian Chickpea Spread

This is a low fat appetizer!! Only .6 g fat, 1 G carb and 35 calories per 1 oz serving

This is a spicy and aromatic version of hummus. It can be used as an appetizer or sandwich spread. Also great in a pita bread with fresh mixed greens or served with vegetable crudites.

1/2 cup minced onions
1 tsp canola oil
2 garlic cloves, minced
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp garam masala
1/8 tsp cayenne pepper
1 cup diced tomatoes
1 (16 oz) can chickpeas
2 tsp lime juice
1 Tbsp chopped fresh cilantro
salt to taste

In a nonstick skillet, saute the onions in the oil on low heat for about 5 minutes. Add the garlic, coriander, cumin, garam masala and cayenne and saute for another 2 minutes, stirring constantly. Stir in the tomatoes, then cover and gently simmer for 5 minutes.

While that is simmering, drain the chickpeas (reserve the liquid) In a food processor, mix the chickpeas with enough liquid to make a smooth puree Stir the puree into the simmering tomato mixture. Add the lime juice and cilantro, then cook on low for about 5 minutes. Add salt to taste.

Serve hot or cold

Makes 2 cups

I love chick peas and often keep some hummus made up in the fridge. This recipe takes the idea of hummus to a whole new level for me. Thank you!

I usually end up buying this in the store. Thank you for the recipe, that should save me a couple bucks, and probably taste twice as good.
