Ingredients:
1 ea. Half avocado
3 tsp. black raisins,
2 tsp.. spiced pecans
5 oz. mix greens
1 tsp. diced cantaloupe
1 tsp. diced honeydew
1 tsp. diced mango
1 tsp. minced cilantro
Vinaigrette:
3 oz. Golden Raisins
1 tsp. roasted garlic
1 tsp. roasted shallot
1 tsp. Dijon
3 oz. red wine vinegar
3 oz. pineapple juice
2 oz. Malibu coco rum
3 oz. sugar
Directions :
In a blender add all the ingredients for the vinaigrette and blend until smooth and all ingredients bind with each other, in a medium size mixing bowl add the raisins, cantaloupe, honeydew, mango, cilantro and season to taste with salt and pepper, now add the spiced pecans and toss with the mix greens, for the avocado season it well with salt and pepper and place on a very hot grill and grill until soft, place the salad in the center of the plate, drizzle the vinaigrette over salad and top with grilled avocado.
