Middle Eastern Salad
5-8 servings
1 large head romaine lettuce
2 cups roma tomatoes, finely chopped
2 cups cucumbers, finely chopped
1/2 cup red onion, finely chopped
1/2 cup baby dill pickles, finely chopped
4 cloves garlic, minced
1 tablespoon lemon juice
1/2 cup fresh flat-leaf parsley
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/8 cup fresh mint leaves, chopped
1/8 teaspoon dried thyme
3 tablespoons extra virgin olive oil
Preparation
1.Tear lettuce into pieces
2.Toss all ingredients together and chill.
3.Serve
