Sweet Potato Salad



10-15
servings


2 cups Dukes mayonnaise
1/4 cup buttermilk
1 tablespoon lemon juice
2 teaspoons light brown sugar
1 1/2 tablespoon Dijon mustard
1/2 teaspoon cinnamon
3 lbs sweet potatoes, peeled,cubed,boiled(till almost soft),
1 cup pecans, chopped
1/2 cup chopped green pepper
1/2 cup sliced green onions, including tops
5 slices bacon, cooked and crumbled
10 0z. baby spinach leaves


1.Blend mayonnaise, buttermilk, lemon juice,cinnamon, mustard and sugar until smooth in blender, set aside.
2.In a large bowl, combine sweet potatoes, pecans, pepper and onions.
3.Pour dressing over all; toss to blend.
4.Refrigerate at least 2 hours.
5.To serve, spoon salad into a large bowl lined with spinach; top with bacon.
