Pecan Festival Salad
Ingredients 8 oz. mixed field greens
1/2 cup blue berries
2 cups fresh straw berries,washed and capped
8 oz. canned mandarin oranges, drained
1/4 thinly sliced spring onions
1 cup pecan halves
2 tablespoons. butter
2 tablespoons. light brown sugar
4 tablespoons. seedless raspberry or strawberry jam
3 tablespoons. garlic red wine vinegar
salt and pepper to taste
1.Melt butter in frying pan, add brown sugar and pecans, toast slowly over medium heat until pecans are golden brown.
2.To make vinaigrette add 4 tbls. of the jam to the red wine vinegar, followed by spring onions and pecans. Salt and pepper to taste.
3.Mix fruit and greens, add vinaigrette-dressing mix lightly. Garnish with blue berries and strawberries.
4.You can also top with sliced chicken breast
