Broccoli and Bacon Salad


4-6
servings

2 cups broccoli, small florets
1 vidalia onion, chopped
1/2 cup grapes, sliced in half
6 slices bacon, fried crisp and crumbled
2 teaspoons cider vinegar
2 teaspoons sugar
1 cup Dukes mayonnaise
1/2 cup chopped dry-roasted cashews
1/2 teaspoon cumin power

DIRECTIONS
1.Mix broccoli, onion, cashews and grapes.
2.Mix vinegar, cumin, sugar and mayonnaise.
3.Pour over vegetable mixture.
4.Top with bacon and serve

I have a very similar recipe to this one, using mandarin orange slices in place of the grapes and sunflower seeds instead of the cashews. This is a wonderful dish to take to a pot luck lunch, as it looks so inviting and will most likely stand out from the other vegetable dishes.

I know with the recipe I have, it recommends that you put the dressing on just before serving, and of course the bacon just before it hits the table, but I have mixed in the dressing at home and then put the bacon on after getting to the site of the pot luck and it seemed to do fine.

Will try the mandarin oranges, sounds good, but will have to stay with the cashews, but thanks for the ideas.

LOL I know what you mean. I once tried my recipe with walnuts instead of the sunflower seeds. It didn't quite satisfy my itch.
