Egg Salad
8 Servings
6 large eggs, hard cooked, cooled and diced
1/2 cup celery, chopped fine
2 tablespoons fresh chives, chopped fine
1/4 cup melted butter
1/8 teaspoon fresh ground black pepper
1/4 teaspoon balsamic vinegar
1/2 cup Dukes mayonnaise, more if desired for consistency
2 tablespoons onion, finely chopped
1/8 teaspoon garlic salt
16 slices bread
1.Mix together the eggs,chives,onions, butter, mayonnaise, vinegar and seasonings.
2.Refrigerate until your ready to make your sandwiches.
3.Dividing it to make 8 sandwiches,Spread on one slice of bread then top with another piece of bread.
