Default Black Bean and Bell Pepper Salad

Black Bean and Bell Pepper Salad

4 servings

1 can(16 oz.)black beans drained and rinsed
1 lg. green bell pepper, diced
1/2 cup diced fresh tomato, (can use drained canned tomatoes)
2 scallions, thinly sliced
1 tablespoon chopped cilantro
1/2 teaspoon curry powder
1/2 teaspoon crushed red pepper
1 tablespoon olive oil
1 tablespoon lemon juice
1/4 teaspoon sea salt
1/8 teaspoon fresh ground pepper

1.Place beans in bowl and add bell pepper, tomato, scallions,and cilantro.Toss to mix.
2.In another bowl combine olive oil, lemon juice, curry powder, salt,pepper, and red pepper, mix.
3.Pour over bean mixture and toss well to coat.
4.Serve and enjoy

This looks like it would be an ideal recipe for anyone who is watching carbs and most especially anyone who is controlling diabetes through diet. I may have to whip this up soon and give it a shot myself, since I love just about everything that is in it.

This sounds like it would be just perfect on a hot summer day. I always love a chilled salad for lunch.
Does it taste better if you let the seasonings mix and blend for awhile?

You know, I had not thought about that, but I bet this would be extra good if you made it the night before and then served it for lunch the next day.
