Macaroni Salad
8 servings
3/4 cup Dukes mayonnaise
1 teaspoon Dijon mustard
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
1/4 cup chopped pimiento
1/2 cup chopped onion
3 sliced green onions with tops
1/2 teaspoon celery seed
1/2 cup sweet salad cubes
1 tablespoon juice from sweet salad cubes jar
1/2 lb bacon, fried and crumbled
1 (8 ounce) package elbow macaroni
paprika
Salt and black ground pepper to taste
1.In a large pot bring about 3 quarts water to a boil, add macaroni, stir to keep from sticking together.Cook 10 to 12 minutes or until tender.
2.Remove from heat and drain, pour into large bowl and let cool.
3.Chop red and green peppers and pimiento.
4.Add to the macaroni the chopped peppers, pimiento,onions, celery seeds, salad cubes and juice from salad cubes jar.
5.Add mayonnaise, bacon and mustard,salt and pepper to taste, mix well.(Can add more mayonnaise if needed.)
6.Pour into serving bowl and sprinkle paprika over top.
7.Cover and let chill.
