Wild Rice Salad
8 servings
1 cup wild rice
1 cup chopped celery
1/2 cup chopped onions
1/2 cup black beans, drained and rinsed
1/2 cup canned corn
Dressing
1/4 cup olive oil
1 tablespoon soy sauce
1 teaspoon curry powder
1 teaspoon sugar
1 teaspoon balsamic vinegar or red wine vinegar
1/2 cup pecans, chopped
1/2 tablespoon honey
1.Cook 1 cup of rice in slightly salted water.
2.Drain and refrigerate until cooled.
3.Add the celery, corn, beans and onions.
4. Add the dressing ingredients and mix together .
5.Serve and enjoy.
