Wilted Spinach Salad With Bacon
4 servings
5 slices bacon
1 tablespoon dry mustard
2 minced garlic cloves
1/4 cup wine vinegar
1/4 cup thinly sliced green onions
10 oz bag baby spinach ( washed and stemmed)
1 hard-boiled egg, chopped
1 teaspoon sugar
1.Fry bacon till crispy.
2.Remove from pan and set aside to cool.
3.Pour all but 3 or 4 tablespoons of bacon grease from pan.
4.Into the bacon grease, stir the dry mustard, oil, vinegar, sugar and garlic.
5.Heat bacon fat, garlic, vinegar, and sugar on medium heat until mixture comes to simmer and sugar disolves.
6.Pour over salad and toss.
7.Place in a bowl.
8.Top with quartered hard boiled Egg and crumbled Bacon.
9.Enjoy.
