Antipasto Salad
1 stalk celery, diced
1/2 pound diced Provolone cheese
1 large red onion, sliced very thin
1 large cucumber, sliced
1 small jar pimientos (drained & chopped)
1/2 pound diced Genoa salami
Toss above ingredients in a large bowl. Chill until ready to serve. Pour salad dressing over mixture before serving
Salad Dressing: In small bowl, mix together all of the following ingredients
1/2 tsp oregano
1/2 tsp garlic powder
1/4 tsp fresh parsley
1/4 cup red wine vinegar
1/4 cup olive oil
1/2 cup water
salt and pepper to taste
