LIGHT SALAD

BURNT CORN SALAD

Mexicans love their food smoky flavoured. This corn salad is a tasty example.


Cooking Time : 10 min.
Preparaiton Time : 10 min.

Serves 4.

Ingredients

1 1/2 teacups cooked sweet corn kernels
1 white onion, sliced
1 capsicum, sliced
1 tomato, sliced
3 teaspoons oil
salt to taste

To be mixed into a dressing (in a bottle)

2 tablespoons olive oil or salad oil
1 tablespoon lemon juice
2 pinches chilli powder
a pinch sugar

Method
1. Heat 2 teaspoons of oil in a pan until it smokes.
2. Add the corn kernels and go on stirring until they are slightly burnt. Remove.
3. Add the remaining oil and the onion and capsicum and cook for 1 minute. Remove.
4. Mix the corn kernels, onion, capsicum and tomato and salt.
5. Pour the dressing on top.
6. Serve immediately.
