Pasta Summer Salad
1 lb tri-color spiral pasta (or your favorite - cooked and drained according to package directions.), cooked al dente, drained
1 (10 ounce) grape tomatoes, halved lengthwise
1 (6 ounce) can medium black olives, drained, sliced in half lengthwise
2 green/red bell pepper, medium,diced (one each color)
1 (8 oz bottle)sun-dried tomato dressing
1/4 cup parmesan cheese,shredded
1 (8 ounce) jar pesto
1/2 teaspoon salt, more if needed
2 teaspoons minced garlic
12 ounces mozzarella cheese, shredded
2 tablespoons Bacos bacon bits
Cook pasta, set aside to drain and cool a bit.
In large bowl or punch bowl, add rest of ingredients, folding gently til well mixed.
Gently fold in pasta.
Adjust seasoning to taste.
Serve immediately, or refrigerate.
