Salad dressing:
2 large cloves garlic, peeled
1 inch piece fresh ginger, peeled
1 cup canola or extra light olive oil
juice of 1 lemon
2 Tablespoons soy sauce
2 Tablespoons tahini
1 Tablespoon white or cider vinegar
Put garlic and ginger in food process and then slowly add the oil Add remaining ingredients and process until smooth. Set aside.
Salad ingredients:
Lettuce (any mixture of greens is fine)I use either 1 18 oz package or 9 cups greens
1/4 cup schredded or julienned carrots
2 cups cooked and shredded chicken
optional: sliced red onion, snow peas, mushrooms, sunflower seeds, cut cashew nuts
1 small can mandarin oranges, drained
Chow mein style noodles
Mix salad greens with carrots and chicken and any other optional vegetables. Slowly pour on desired amount of salad dressing and mix well.
Arrange on serving dish/platter and top with nuts, mandarin oranges and chow mein noodles.
