Default Bourbon Caramel Sauce

This is terrific served on ice cream, pound cake, bread pudding - even over rice pudding!!

1 1/2 cups sugar
2/3 cup water
2 teaspoons light corn syrup
1/4 cup low fat evaporated milk
1/4 cup fat-free half and half
1 Tablespoon butter
3 Tablespoons Bourbon

Sprinkle sugar evenly on bottom of large saucepan. Combine water and corn cyrup then pour over sugar. Cook over medium heat until sugar dissolves (4-6 min) stirring gently. Cook an additional 20 min - stirring only occasionally. Remove from heat & stir in milk, half & half, and butter using a long handled wooden spoon as mixture bubbles. Stir constantly & Cook over low heat until smooth Remove from heat - stir in bourbon.

Serve warm.
This will thicken as it cools. Cover leftovers with plastic wrap to prevent a "skin" from forming on surface
