Default Honeycomb Butter

50g honeycomb, chopped
125g butter, softened
1 T honey
1/4 cup mint leaves, finely chopped

1. Place honeycomb in a food processor and process until finely chopped.
2. Add butter, honey and mint and process until well combined.

Delicious on pancakes, pikelets, crepes.

Can you tell me where you'd purchase a honeycomb? I've never seen this on the shelves at the market. Also, what is a pikelet? I know I'm going to learn a few things here
