1 cup white sugar
6 large passionfruit, halved
1 t cornflour
1. Combine sugar and 1/2 water in a microwave safe bowl. Microwave on high for 6-8 minutes, stirring every 2 minutes until syrup thickens slightly.
2. In a separate bowl combine the cornflour and 2 teaspoons water to form a smooth paste.
3. Scoop out the passionfruit and add to the cornflour mix.
4. Add the passionfruit mix to the sugar syrup.
5. Microwave on high for 2 minutes, stirring every minute or until sauce comes to the boil.
6. Set aside to cool for 30 minutes before serving.
Serve over ice cream, waffles or pancakes.
