Ingredients:
2 ½ C. Thai Hom Mali Rice ( Pre- Cooked)
3 oz. Thai Rock Shrimp
3 oz. Clams
2 tsp. Saffron
3 oz. Andouille Sausage (Cut into Slices)
3 oz. Mussels
3 tsp. Sweet Thai Chile
1 ½ C. Chicken Stock
2 oz. Bay Scallops
4 oz. Duck Breast (Cut into Slices)
Directions:
-In a hot saute pan add the duck breast and saute for 1 min. until lightly golden, add the clams, mussels, sausage, and ½ C. chicken stock, cover and cook for 2 min. now add the shrimp, scallops, Thai Chile, rice, saffron, and 1 C. chicken stock. Cook for 5 to 7 min. until the rice turns slight yellow and all ingredients start to stick to each other, remove from heat and plate on a long boat, garnish with parsley.
