Hi All,

I love Italian food. My wasteline will thusly attest. Anyway - I'm looking for everyone's favorite (REAL) Italian recipes. My mom is full Italian and cooks the meals that her mother taught her to cook, etc. NO RAGU - haha

Share your best recipes so we can all feel the love. Thanks everyone

My favorite recipe is Fettuccine Alfredo prepared with spinach pasta.

Anchovies or chicken and mushrooms are my favorite combinations for this dish.

Pasta with Anchovies is for lovers of Anchovies
Start with 2 cloves of garlic minced, saute in olive oil in a fry pan. Add 4 , 5 or 6 fillets of Anchovies That have been rinsed under cold running water and a few red pepper flakes. saute until the fish melts a minute or two. Cook 1 Lb. spaghetti al dente and drain saving some of the water. Mix the spaghetti in the pan with the anchovies and garlic. add some of the water if it is dry. Top with toasted bread crumbs....serves 4

The anchovies dish you suggested sounds really nice - and, like MasterMind mentioned, easy to fix. I think I'll give this a shot.

Lasagna is one of my faves too. My wife makes a really good one with italian sausage - our homemade red sauce, mushrooms, spinach (which might be the kicker, ricotta, mozarrella, (am I missing something) - parmigianno

soooo good.
