Default Steve's Chicken

When my brother was doing his residency in medical school he made this chicken on one of our visits. The original recipe called for deep frying. I tweaked the recipe and these are the final results.

Steve's Chicken

1/2 cup milk
1 egg
1 cup flour
One stick of Fleishman's margarine, melted in pan

2 teaspoons garlic salt
1 teaspoon paprika
1/2 teaspoon poultry seasoning
1 teaspoon black pepper

Blend milk and egg. combine flour and seasonings in a plastic bag. Shake chicken in seasoned flour. Dip chicken in milk/egg mixture. Shake chicken a second time in seasoning mix to coat thoroughly. Put chicken skin side down in margarine and then turn side up. Bake in convection oven 370º about 40 minutes. Bake at 400º in a standard oven.

sounds pretty good - have you tried this recipe with skinless boneless chicken pieces to see how it worked?

No, I've only done it with whole chickens or chicken wings.

Been lookin for a recipe just like this. I'll definitely have to try this out. Maybe I'll try the boneless version as well and let you know.

This sounds good and easy. How much chicken do you need in this recipe and how many does it serve?

I use one cut-up chicken, but you could use about 6 chicken breasts if you want. Sometimes we just do wings. It will probably serve at least 4 to 6 people.
