Mexican Hot Chocolate Mix

3 cups confectioners' sugar
3 cups nonfat dry milk powder(1 box@ 9.6 oz )
2 cups miniature marshmallows
1 cup non-dairy powdered coffee creamer
1 cup cocoa powder
4 teaspoons cinnamon


Mix all ingredients together well.
Store in an airtight container.
To serve, place 1/4 cup mix in cup and add 3/4 cup hot milk, stirring until mix is well blended.
(Fills four 1 pint jars or 1 half gallon jar)

Atkins has a really good recipe for Mexican Hot Chocolate as well. I just love it.

1 cup cream
1 cup water
5 teaspoons unsweetened cocoa powder
sugar or sugar substitute to taste
1/2 teaspoon each vanilla extract and almond extract
1 stick cinnamon

Combine all ingredients in a small saucepan. Heat over medium flame until scalded but not boiling; stir with a whisk. Stir well, and serve with a cinnamon stick in coffee mugs.

The original way is with water, chocolate, hence the movie LIKE WATER FOR CHOCOLATE (try Valrhon), cinnamon stick and chile (you can use cayanne), just be careful because it BLOOMS and you want to enjoy the experience. You have not lived till you have mildly spicy hot chocolate! But of course you can add Cream. Then rent CHOCOLAT with Johnny Depp ENJOY! OPT> vanilla bean and/or almond butter and if you add more sugar use GOOD
sugar and sparingly. This is in regard to MEXICAN HOT CHOCOLATE
