Great summer recipe!!! Even better with a bit of vanilla ice cream or whipped cream served on top!!
Blueberry Buckle
Ingredients:
1/4 cup butter, softened
3/4 cupsugar
1 egg
1 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
2 cups fresh blueberries
Topping:
2/3 cup light brown sugar
1/2 cup all-purpose flour
1/2 tsp ground cinnamon
1/3 cup cold butter, cut in small pieces
In a small mixing bowl, cream butter and sugar.
Add vanilla and beat in the egg.
In another bowl, combine flour, baking powder and salt.
Alternately add flour mixture and milk to creamed mixture.
Fold in the blueberries.
Pour into greased 9 inch square baking pan.
Topping:
Combine brown sugar, flour and cinnamon in a bowl.
Cut in butter until mixture is crumbly.
Sprinkle over blueberry mixture in pan.
Bake at 375 degrees for 35-45 minutes or until toothpick inserted near center comes out clean.
