Well, the first ingredients *do* get made in a saucepan, so I suspect
it does indeed count as cooking. hehe If one can't boil water, these cookies
can't be made, right?

Wow, for long time I was looking for this recipe to complement my "emergency cooking recipe book".

You know, sometimes you don't want to turn the oven on, and some others you have not all the ingredients at hand so, as in example, I have a flourless cake as part of such arsenal.

A flourless cake? I have a friend who is supposed to avoid flour (gluten actually). Would you mind sharing your recipe for the cake?

Sure, this is the basic recipe, however your friend can add some orange peel to the batter or a tablespoon of brandy and/or espresso coffee at step 4 for a flavor variant.

Ingredients:
3/4 cup sugar
1 stick unsalted butter or margarine at room temperature
7 large eggs, separated
8 oz. bittersweet chocolate, melted and cooled
Pinch salt

Directions:
1. Preheat oven to 350º F and grease a 8 inches pan
2. Beat butter and sugar until light.
3. Add egg yolks one at a time, beat until smooth after each addition.
4. Beat in chocolate.
5. Apart, beat egg whites with salt until soft peaks form.
6. Stir a third of whites into batter
7. Gently fold in remaining whites using a rubber spatula,
8. Pour smoothly the batter into the pan and bake for 40 minutes or until well risen, center is firm and elastic to a fingertip.

These cookies are really good and easy to make. I make them all the time. My grandkids love them. Infact they like to help me make them.

May I check what is the consitency of the Oatmeal?

Can we use rolled oats eg Quakeroats, then boil with water?

I believe for this recipe you should use Quaker Quick Oats - do not boil the oatmeal -use it right out of the box - it is to be mixed in with the other ingredients as per the recipe

Mmm those sound good. I like mushy cookies too so the consistency should be perfect. Thanks for the post spamalot
