Ingredients:
1 # Sweet Potatoes
2 ea. Eggs
1 C. Cream
6 oz. Butter
1 tbsp. Chives
1 tsp. Garlic
1 tsp. Cumin
1 tbsp. Cilantro
TT Salt / Pepper
Directions:
-Roast the sweet potatoes at 350 degrees for 45 min. remove season with salt/ pepper then add the rest of the spices and herbs; add the butter and slowly add the cream, blend until smooth. Let the ingredients rest for ten min. then add the eggs and add the mixture to a piping bag lined with a star tip. S/P/S a sheet pan and pipe out rosettes about 2” high. Bake at 350 degrees for about 15 min. until golden brown.
