This came from one of the teachers at the college where I worked. They keep forever. A great make ahead recipe.

SPINACH ROLL-UPS

2 boxes frozen spinach, defrost and squeeze out the liquid
1 cup mayonnaise
1 cup sour cream
1 cup Baco Bits
1/2 pkg Buttermilk Ranch Dressing
Flour tortillas

Mix together first 5 ingredients. Spread on flour tortillas and roll up.
Wrap in plastic wrap. Refrigerate overnight. Slice and serve.

These sound great! I'm a huge fan of spinach and am always looking for new ways to use it. This sounds delicious, and like it would be good to make for a party.
