I've done a couple of simple ones in the past. There was the basic fruit boat, where I scalloped the rim of the boat and then carved designs into the sides of the boat to reveal the layers of green, white rind, and then the red of the meat.
I also did one using a yellow meat watermelon and accented it with florets I made from a red meat watermelon. This one, I had cut in half and made a look kind of like a jewelry box that was open and had goodies spilling out of it onto the platter the whole thing was arranged on. Looked pretty good even if I did do it.
