I've seen them in Mexico at buffets, and they can be quite appealing. The ones I saw made use of different depths of cuts, so you'd have a mixture of the green skin, the white part just below the skin and the reddish colour of the edible part of the melon.
They really are works of art! Quite engaging and they add to the dressing of the table. Kind of like ice sculptures!
