1 lb. bag of navy beans
1/2 cup of brown sugar
6 oz. molasses
1 lb. piece of salt pork, diced small
1 lb. linguica, removed from casing and cut into small chunks
1 large onion, chopped
2 tbsp. mustard
Boil about 6 cups water in a heavy saucepan. Add beans, reduce heat, cover, and simmer about 1 1/2 hours on very, very, low heat until the skins start to burst. Drain beans.
Put beans, sugar, molasses, salt pork, linguica,onion and mustard into a large crockpot. Cover with hot water by about an inch and a half. Cook on low heat at least 10 hours.
I have made this without the linguica and it is still a great baked bean recipe.
