To celebrate, I grabbed an Old Bay Recipe from the good people at McCormick. It's really late here... almost midnight... but I am absolutely craving this! The combination of Catfish and Old Bay just seems like a great fit - I'll be trying this in the very near future:
Ingredients
1/3 cup cornmeal
1 tablespoon OLD BAY® Seasoning
1 teaspoon McCormick® Parsley Flakes
1/4 teaspoon McCormick® Garlic Salt
1 pound catfish* fillets
1 egg
3 tablespoons vegetable oil
Directions
1. Mix cornmeal, Old Bay, parsley and garlic salt in shallow dish. . 2. Dip fish fillets, 1 at a time, in beaten egg. Allow excess egg to drip off. Coat with cornmeal mixture.
3. Heat oil in large skillet on medium heat. Panfry fillets 4 to 5 minutes on each side or until fish flakes easily with fork.

that is how I fry my catfish. I used Old bay seasoning all the time
